One Pan Vegan Meatball Pasta Recipe
Follow the recipe below to make One Pan Meatball Pasta using Beyond Meat Meatballs and Road’s End Organics Shitake Mushroom Quick Gravy Mix.
Prep Time: 10 minutes
Cook Time: 30 minutes
Serves: 4 people

Ingredients:
1 Tbsp olive oil
1 package Beyond Meat Meatballs
1 yellow onion, cut into large wedges
4 carrots, cut into pieces similar in size to penne pasta
5-6 cups water
8 oz. penne pasta
1 package Road’s End Organics Shitake Mushroom Quick Gravy Mix
Salt & pepper to taste
Instructions:
- In a large, non-stick pan, heat olive oil over medium heat. Cook Beyond Meat Meatballs until seared, then take out and set aside (3-5 mins).
- In the same pan, add onion and carrots to the remaining oil, and sauté covered on high heat flipping once to sear each side (3-5 mins).
- Start with 3 cups of water and add more as necessary. Carefully add water to pan, salt to taste, and deglaze bottom of pan with spatula to get all the flavor. Add pasta and turn heat to high. Stir frequently until pasta is al dente (about 10 mins - varies depending on your pasta).
- Add Road’s End Organics Shitake Mushroom Quick Gravy Mix packet and stir. If dry, add more water until sauce is the consistency you want (1 min).
- Add Beyond Meat Meatballs and stir. Let simmer on low heat 2-3 minutes until Beyond Meat Meatballs are heated through.
- Serve and enjoy!
